Bread ma'am bread ma'am

A wonderful Texas wintry day hello to you!
Just a quick post about the no knead crusty bread I mentioned previously. This recipe works as promised and delivers a wonderful round loaf of crusty bread right from your own oven.

I follow the Mother Earth News website recipe and technique and friends and neighbors I will tell you that it is the way to some of the best bread you've ever made. Read on in wonder.

So the recipe is simple, flour, salt, yeast, and water. Yep that's really it. If you have the time and just these four things you too can be on the way to making bread for pennies a slice as it was intended.

Ok so here we see the fist general thing to do which is to mix everything up in a pretty good size bowl. I cover mine and put it on top of the fridge to rise all night. The recipe says 12 hours or more I think.



It will have doubled and almost tripled it's size during the night.
























Then it is turned out onto a board and just folded over a couple of times from the corners, then it is covered in plastic for 15 minutes and allowed to rest.


After that is it again handled and shaped and again allowed to rest for another hour or so where it will grow again. Once it has been an hour or so turn on the oven to 475 and warm up the dutch oven inside it. Then flip the dough into it and put the cover back on.







30 minutes later take off the cover and let it brown for another 15 minutes.

Now combine this with some good stew and you got yerself a meal.
